An interactive workshop with Kristen Giesting, Michael Hood, & Ben Belty

Discover the ancient art of acorn processing; a practice which turns a common tree nut into the valuable, calorie dense food source once relied upon by innumerable prehistoric peoples. Regularly utilized in Korean cuisine, the humble acorn is having its own renaissance here in North America. We will demonstrate making acorn flour using a cold leaching process, which is required to render the nuts both edible and delicious. Participants will be empowered to harvest, process, and consume the abundant gift of the acorn during the next harvest season.
